Featuring Special Guest Speakers...
Mark Messina, PhD is a nutritionist with a master's degree in nutrition from the University of Michigan and a doctorate in nutrition from Michigan State University. Mark has worked for the National Cancer Institute, and was responsible for allocating funding for research into the effects of soy foods on cancer prevention. Dr. Messina also co-edits and writes a regular column for The Soy Connection a newsletter sent to 70,000 dietitians. According to Dr. Messina, over 1000 research articles are published on soy each year; there are tens of thousands of websites with a focus on soy. He is convinced that consuming soy is beneficial and states that articles and discussions about the "dark side of soy" are mostly internet based and come from unknowledgeable and biased people. If you need more information in order to have an intelligent discussion about soy, Dr. Messina is the person to provide it.
Amy J. Lanou, Ph.D., is a senior nutrition scientist for the Physicians Committee for Responsible Medicine and is also assistant professor of health and wellness for the University of North Carolina-Asheville (UNCA). Dr. Lanou currently teaches nutrition, women's health, food politics and nutrition policy, and understanding chronic disease at UNCA. She also taught at Ithaca College and at Cornell University. She has worked with T. Colin Campbell, Ph.D., at Cornell University as a nutrition writer and was managing editor of his newsletter and online journal, New Century Nutrition. Amy is the author of Building Bone Vitality and will talk about calcium, vitamin D, bone health, osteoporosis and related issues.
Chef AJ has followed a plant-based diet for the last 32 years, and has extensive experience as a vegan chef, specializing in glorious vegan desserts that do not include any processed ingredients. She is a consulting chef at Exsalus Health and Wellness Center, has taught at several culinary schools in Los Angeles, and prepared food for many celebrities and television shows. A former comedian, her classes will make you laugh; her favorite T-shirt states "My IQ is Higher than my Cholesterol." This will be the most fun you have ever had with food!
